Grandpa's Loaded Cornbread Casserole

I snagged this from Lorie over at Be Different.. act Normal This came from her Grandfather-in-law. He sounds like fun.

"He is Mr. Fix-it, Mr. Build-it AND Mr. Cook it. And he is 85."

What you need:

1&1/4 cups yellow cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup milk
1/2 cup butter, melted
4 large eggs, lightly beaten
2 15-ounce cans creamed corn
6 slices bacon, cooked and crumbled
1 cup shredded Cheddar cheese
1 cup canned french-fried onions

What you do:
Preheat the oven to 350 degrees. Grease a 9- by 13-inch pan. In a big bowl, combine the cornmeal, baking powder, salt and baking soda. Add the milk, butter and eggs. Mix well. Add the corn and mix well. Pour into the prepared pan. Spread the cheese and bacon evenly over the top. With a fork, push the cheese and bacon into the batter, just submerging it. Sprinkle the onions over the top. Bake for about 1 hour until a toothpick inserted comes out clean. Serve warm or at room temperature. The consistency will be more like that of a casserole than cornbread. (It was pretty cornbread consistency.

Hash brown Casserole

Hash brown Casserole - Jenn at I hate Whine

1 ( 32oz )pkg Hash Browns (cubed)
1/2 cup melted margarine or butter
1/2 cup sauteed onions ( use the margarine or butter )
1 can Cream of Chicken soup
2 cups (16 oz) sour cream
2 cups cheddar cheese ( grated)
salt and pepper to taste
Topping :
2 cups crushed cornflakes
1/4 cup margarine or butter
Mix all together and place in your baking dish . Mix corn flakes and melted butter together and sprinkle over the top.
Bake at 350 for 45 mins or until you see the top is golden brown and crispy.
Like always I never follow this , I just throw in a couple big blobs of sour cream and throw in whatever I feel like for the cheese. I also find that we like it better made with the shredded hash browns that say savory seasoned on the bag. I never put salt in and always shake pepper in and mix it all through. the other thing i do is add a little pepper to the crumb mixture as well as a little garlic powder. Just do whatever sounds good to you, or what you know your husband or kids will eat.

Homemade Spaghetti Sauce

I snagged this spaghetti sauce recipe from See Mommy Sew

1/2 c. chopped onion

1 lb. ground beef

3 small cans tomato sauce (8 oz. each)

1 can tomato paste

enough water to make it as thin or thick as you like

4 tsp dried basil (of course, use fresh if you have it)

4 tsp. dried oregano

1 tsp fresh ground pepper

2 1/2 Tbsp. sugar

1/4 tsp. Cayenne pepper

salt to taste

3 bay leaves

1 tsp garlic powder (I use freash garlic, instead)

1 1/2 tsp. dried thyme

1 tsp. rosemary (I don’t like the pine needly feel of rosemary so I usually grind it up in my coffee grinder)

Brown ground beef and onion. Add all the rest of the ingredients. Simmer for an hour or so. You can cook it longer or shorter or use you slow cooker. Like most spaghetti sauces, it’s pretty forgiving. Serve on top of spaghetti noodles with lots of freshly grated Parmesan cheese and hot, buttery garlic bread on the side.

From A Baker Dozen...........

Dissolve 1 package (1 Tablespoon) dry yeast in in 1/2 cup warm water. Stir in 1 1/2 cups of lukewarm milk, 1 cup cornmeal, 1/3 cup sugar, 1/2 butter (softened or melted), 2 eggs, 1 1/2 teaspoons salt, and 2 cups of flour.

Beat until smooth. Stir in (approximately) 4 cups flour. Knead until smooth (about 5 minutes). Place in greased bowl; cover and let rise until double, about 1 1/2 hours.

Spray two baking sheets, sprinkle w/ cornmeal. Punch down dough and divide in two. Roll each half into 12" circle and spread with softened butter; cut each circle into 14 to 20 wedges, depending on the size of roll you want. Roll up each wedge, starting at wide end and ending at point.

Place rolls with points down on baking sheets. Cover and let rise until double (about 40 minutes). Preheat oven to 400. Brush crescents with melted butter and sprinkle with cornmeal. Bake until lightly browned, about 15 minutes (more for larger rolls).

Breakfast Cookie

From A Bakers Dozen.....

I came up with this recipe as a way to help with hectic mornings. I had a vision of a "breakfast cookie" that my children would love. Something that had enough wholesome ingredients that I could feel good about giving it to them. These freeze well. Just fill a ziplock bag with cooled cookies and pop them in the freezer. Pull out the night before and serve with a glass of milk.

Feel free to adjust the ingredients. Fresh ground wheat works well. You can add more nuts and seeds and use less sugar. Think of this as the foundation of the cookie and make any adjustments you see fit.

I make these cookies large and serve with a glass of milk.

Breakfast Cookies:

Cream 1 cup butter
1 1/2 cup peanut butter (I like Adam's- no sugar)
2 cups sugar (white or brown)

add 4 eggs
1 Tablespoon vanilla
3/4 cup milk

combine seperately
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 cups oats
3/4 cup sunflower seeds

combine wet and dry ingredients. Mix very well. Spoon onto cookie sheet. These have more of a cake texture and will not spread out much during baking. I like to make them big, since they are breakfast cookies.

Bake at 350 for 12 minutes, or until done.

Stand back and enjoy your children's astonished looks as you serve milk cookies for breakfast!

Butter nut balls

Butter Nut Balls by Alisha

1 cup soft butter or margarine (I use spread, because I didn't feel like waiting on the butter to soften today!! it works just a great)
1/2 cup confectioners sugar (recipe calls for it to be sifted, but heh... I don't...)
2 tsps vanilla extract
2 cups sifted (or not!! I'm lazy!) all purpose OR unbleached flour
1 cup finely chopped pecans (or walnuts)
1/8 tsp salt

1/4 cup (I use a bit more than this, but don't measure) more confectioners sugar...for rolling the cookies in.

Beat butter and sugar togehter in medium mixing bowl until creamy. Add salt, vanilla, flour and nuts. Mix until well mixed.. .Shape dough into 1 inch balls, and place on ungreased cookie sheet. Bake in a 375 degree oven for 12-14 minutes or until light golden brown. Roll in sugar while still warm, and then roll again when they have cooled.

This recipe is one my mother and grandmother always used... these have been a tradition in our family.. They HAVE to be there every christmas! : ) Even though they have sugar coated on them, they really aren't an overly sweet cookie, which is nice. It says it makes 36-40 cookies, but I always get about 45-50 of them. Well, it made 45 of them, and I got the 50 from if we didn't eat the dough! LOL We seem to love cookie dough in all forms around here! and since this one doesn't have an egg in it........... : ) it gets eaten in hefty bites! LOL

Are any of you willing to give it a try?

Alishas Chili powder and Chili, yum

Chili Seasoning Mix

1 tablespoon flour
1 1/2 teaspoons chili powder
1/2 teaspoon crushed red pepper flakes
1/2 teasonpoon sugar
2 tablespoons dried onions
1 teaspoon seasoning salt
1/2 teaspoon garlic powder (or dried minced garlic I use powder)
1/2 teaspoon ground cumin

Combine all ingredients in a small bowl and blend well. Spoon mixture into a square of foil fold to make it airtight and label... if you don't use it right away... I make this only a minute before getting the chili going... this makes one pot of chili.

1 pound ground beef
1 large onion chopped
1 15oz can ranch style beans
1 10 oz can of rotels
1 1.25 oz package of chili seasoning mix (the recipe above works beautifully!)
salt and pepper to taste (I find that it doesn't need more than is already in the seasoning mix and beans etc)
2 teaspoons or to taste (we add like tablespoons more! LOL
1 cup water or as needed to your liking
I also add tomato sauce...usually two small cans, we like our chili a little more tomato based, and a bit thicker, this also contributes to the not needing more salt I'm sure... lol : )

In a large saucepan over medium high heat, cook beef, and onion until meat is brown.. (then definently drain or your end result will be greasy on top!) Stir in beans, diced tomato, seasoning mix, salt, pepper, extra chili powder tomato sauce and water. Reduce heat and simmer 2 hours.

Green Jello Salad

(I am pretty sure you whip the whipping cream before putting in)
We grew up with this. Our childhood friends mom would make this and it is so good. i just got the recipe from her!!!

Betty's mashed potatoes

Ok, these are simply and yummy

Ingedients: Potatoes, butter, salt and pepper- thats it

This is a LARGE recipe-
Sack of potatoes- peel or dont peel thats up to you, but Betty peeled hers, cut them up and put them in a LARGE pot to boil. Boil until soft. Drain water and place in LARGE bowl, lol
Next add butter. If you use sticks of butter its about 5-6-7 sticks of butter. If you use butter from a tub just start scooping it out. Put LOTS of pepper in too. Salt to your liking ( i dont think i even add salt). Get your potato masher and start mashing. Need more butter?? add more, need more pepper?? add more......... it's fool proof.
This size is good for Thanksgiving, church, Velasco gathering :o)
Enjoy!! we love it.
Great with meatloaf!!

Chicken Spaghetti

The 'c' with a line over it means "with"
